Anzac Biscuits

Serves: 15 2 biscuits each!

Time for the first Australian specialty! This is also the of the family secret recipes, this one from mum's personal vault. The recipe is dead simple and always a big hit at work! The hardest part is finding the ingredients in the US.

Ingredients 

1 cup Rolled Oats
1 cup flour (I, like mum, use self-raising flour because we like the chewiness, though most people use plain)
½ cup sugar
¾ cup desiccated coconut (unsweetened, I usually have to go to world market or whole foods to find this in the US)
2 tbsp golden syrup (the brand in the US is called 'Lyles Golden Syrup', QFC stocks this, its just hard to find)
½ cup butter
½ tsp bicarb soda
1 tbsp boiling H20
Pinch salt

Method

  1. Oven temp 160 Celsius (325 Fahrenheit)
  2. Mix oats, flour, sugar & coconut together
  3. Melt butter & golden syrup together
  4. Mix soda and boiling water together and add to the butter mix.
  5. Add liquid to dry ingredients
  6. Roll into balls and squash with a fork (between tsp & tbsp), mixture is fairly crumbly. Allow some space between them on greased slide.
  7. Bake for about 15-20 mins.
