Banana Bread

Serves: 10 or whatever

Straight up I love me some banana bread. I like this recipe, but expect it to change in the future. It needs a bit of something, maybe nutmeg, or cinnamon. Maybe I will caramelize the banana's before hand, I don't know but i will find out.

Ingredients

1 3/4 Cup Unbleached All Purpose Flour
1/3 Cup butter (room temperature)
2/3 cup sugar (I used a mix of 1/3 cup sugar, 1/6 cup honey and 1/6 cup golden syrup)
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/4 tsp vanilla
1 cup mashed ripe bananas (I used 2 cups, plus the extra banana on top)
2 eggs well beaten
2 tbs brown sugar

Method


  1. Pre heat oven to 350.
  2. Cream butter and sugar. You shouldn’t be able to see sugar crystals or chunks of butter.  
  3. Mix eggs , bananas and vanilla into the butter sugar cream mixture. 
  4. Sift the dry ingredients together and add slowly fully incorporating before adding extra.  
  5. Spray baking pan oil and pour bread mixture inside.
  6. Place halved banana over the top. Sprinkle with brown sugar. Note: You might need to bake the brown sugar for a couple of minutes to get it to dry out and separate.
  7. Bake in oven aboug 3 rungs from top for roughly 60 minutes
